The culinary journey begins with the Marrakchi Harira, a spiced, bold and aromatic herbal broth traditionally enjoyed to break the fast during Ramadan. Infused with North African herbs and spices, it is served with aged Smen butter and sweet Medjool dates for a perfect balance of richness and sweetness. The classic Moroccan Homemade Mixed Salad showcases a vibrant medley of seasonal vegetables—carrots, eggplants, zucchinis, tomatoes, and pumpkins—delicately seasoned with traditional herbs and spices to highlight their natural flavours. Savour the Free-Range Chicken Pastilla, a quintessential Moroccan pie filled with tender chicken, toasted almonds, gum Arabic, and fragrant pure saffron, all encased in delicate pastry baked to golden, crisp perfection. The Authentic Moroccan Couscous offers a choice of tender veal, fresh seafood, or seasonal vegetables, accompanied by spiced broth and classic garnishes that embody the heart of Moroccan cuisine.
